Ricotta cheese Burekas

MAKES
INGREDIENTS:

2 sheets of Butter puff pastry defrosted
​
Filling :
​
½ cup of Ricotta cheese
¼ cup of grated Edam cheese or similar
(optional: Feta cheese)
Pinch of black pepper
2 tablespoons of sesame seeds
1 egg yolk for brushing

METHOD:
​
1.Heat the oven to 200ºc - 220ºc
2.Cut the two pastry sheets into half into two big triangles and again into half ( to make 4 small triangles in each quarter ).
3.Mix the ½ cup of Ricotta cheese and the ¼ cup of grated Edam cheese and a pinch of black pepper
4.Fill each triangle and fold into half.
5.Close the edges so it makes small triangle “packages”.

6.use a fork to close the edges.
7.Lower the temperature of the oven to 180ºc after 10 min
​
8. Make the egg wash by mixing 1 egg with one egg and a bit of water.
9.Brush the Bourekas with some egg wash.
​
10. Sprinkle the sesame seeds.
11.Place in the hot oven.
​
12.Bake for 15-20 min until golden.
